Vanilla Butter Cake Recipe
Ingredients
2 ½ cups (310g) all-purpose flour
2 ½ tsp baking powder
½ tsp salt
1 cup (230g) unsalted butter, softened
2 cups (400g) granulated sugar
4 large eggs
1 tbsp vanilla extract
1 cup (240ml) whole milk
Instructions
Preheat Oven:
Preheat your oven to 350°F (175°C).
Grease and flour two 9-inch round cake pans.
Mix Dry Ingredients:
In a bowl, sift together the flour, baking powder, and salt. Set aside.
Cream Butter & Sugar:
In a large bowl, beat the butter and sugar with an electric mixer until light and fluffy (about 3-4 minutes).
Add Eggs & Vanilla:
Beat in the eggs one at a time.
Mix in the vanilla extract.
Combine Wet & Dry:
Gradually add the dry ingredients to the butter mixture in three parts, alternating with the milk.
Start and end with the dry ingredients. Mix until just combined.
Bake:
Divide the batter evenly between the prepared pans.
Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Cool:
Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Decorate:
Frost with your favorite buttercream, whipped cream, or cream cheese frosting.
Add sprinkles, fresh fruit, or nuts as desired.
Optional Add-Ons
Chocolate Variation: Replace ½ cup of flour with cocoa powder.
Lemon Cake: Add 2 tbsp lemon zest and substitute part of the milk with fresh lemon juice.
Berry Filling: Layer with fresh strawberries, raspberries, or blueberry compote.
